OUR DOUGH 

All our pizzas are made from scratch using a traditional Neapolitan recipe. We only use fresh dough, prepared daily and slowly proved for 36–48 hours.
This slow fermentation process gives our pizza its light texture, beautiful airy crust and distinctive depth of flavour. It also makes the dough easier to digest — the way real pizza should be.
There are no preservatives and no added sugar.

All of the ingredients we use at L’ombrello are carefully selected to ensure the highest quality. Wherever possible, we source local and Fairtrade products.
